In celebration of the debut for Maker’s Mark Cellar Aged 2024, I joined a group of whisky and spirit reviewers at Maker’s Mark headquarters in Loretto, Kentucky for a day of tours, lunch and of course a private tasting.
Our Cellar Aged 2024 tasting was led by Innovation Manager Beth Buckner and Senior Director & Head of Innovation Blake Layfield.

Today’s tasting takes place in a built-in cave within the limestone shelf itself, at a chilly 50 degrees. It’s a memorable experience for a memorable bottle. As we walk into the limestone cellar, there’s dozens of barrels stationed on the floor, which is part of the Private Selections Program we’ll hear about below
Maker’s Mark Cellar Aged 2024
Maker’s Mark Cellar Aged 2024 blends 15% Maker’s Mark 12-year-old and 85% Maker’s Mark 13-year-old, at 59.7% ABV or 119.3 Proof.
The aroma carries notes of caramelized sugar and toasted almond. The palate unveils a delicate interplay of buttery shortbread, a surprising bite of coconut, and spices. A lingering finish highlighting dried dark fruit and oak undertones.

The 2024 bottle (the 2nd inaugural Cellar Aged effort) takes a noticeable turn from it’s 2023 first path.
The 2023 is a blend of 87% 12-year-old and 13% 11-year-old barrels. Proof at 115.7
In comparing, you’ll notice strong differences. 2023’s bottle offers lighter greeting. Aromas of caramel syrup, cinnamon sugar, subtle red fruit. Cornbread, apricot, brown sugar.
Whereas 2024 is a more matured taste profile. The aroma carries notes of caramelized sugar and toasted almond. The palate unveils a delicate interplay of buttery shortbread, subtle coconut, and spices. A lingering finish highlighting dried dark fruit and oak undertones.
Private Selections Program
A Maker’s Mark priority is to maintain their taste profile. Famously, aged between 6 – 8 years old, but every barrel ages a little bit differently.
When loyal customers asked for a single barrel, they had to politely decline, but wanted to find a way to excite and involve their audience base.
So they created the Private Selections Program, which is how enthusiasts visit and pick their taste, a vision of what they want their Makers Mark to taste like and then the company uses custom staves in a barrel, which were seen stored on the floor around us.

Award-winning short film The Soul Trader will be to be screened in Washington DC as part of DC Shorts International Film Fest in ALAMO DRAFTHOUSE CINEMA DC (630 Rhode Island Ave NE) on Friday September 6 at 12pm.
The Soul Trader is a 12 minute short proof of concept for a feature or series directed by Susan Dynner (Brick, Punk’s Not Dead, Code Blue: A Love Story) and starring Shane West (A Walk to Remember, ER, The Dirty South), Donna Mills (Knots Landing, Nope, Origin), and newcomer Shauna Grace.
The story follows Coral Chase (Shauna Grace), an occult hitwoman who has the power to steal life-extending souls, which she then sells to vain, wealthy elites like Erica Claessen (Donna Mills), who clings to the crumbs of youth. She’s flanked by stoic bodyguard Damien (Shane West), who ultimately emerges from the shadows as her rival when she’s about to carry out a money-spinning hit at a target’s home and realizes she’s not the only one with murder in mind.

The short film launched at the Cannes Film Festival’s American Pavilion in May and has been gaining momentum ever since.
It won its first award just weeks later at the Manhattan Film Festival in NYC. Now it’s set to screen at many more festivals on the West Coast, East Coast and across the globe.
“This project is definitely a good luck charm. Playing the role of Coral, working with our cast and crew has been incredible. But the biggest thanks is the reaction from the audience. Getting to meet people who are excited and inspired by the story and characters.”

Dynner’s experience as a studio development executive for visionaries such as Richard Donner and Wolfgang Peterson shines through. Also, her producing work on Sundance hit “Brick” and festival darling “Punks Not Dead” shows her ability to bring production value on a range of budgets.
Both Dynner and Grace will attend their DC Shorts screening on Friday September 6 at 12pm and be available afterwards to discussion.

So much Italian wine is packed with great flavor, great food pairing possibilities, even great price tags ($20 or less). And yet many of us don’t reach for their bottles at the wine shop because we haven’t discovered them yet.

So where is Oltrepo Pavese?
Oltrepo Pavese is in the north-west Italian region of Lombardy. Within Italy’s 20 regions, Lombardy (or Lombardia) is located on the Northern end, bordered by Piemonte, Emilio-Romagna, Veneto, Trentino – Alto Adige.
Italian Oltrepo Pavese wines History
Oltrepo Pavese has a long wine history. It’s called ‘The Old World’ for a reason.
Viticulture was mentioned in the area as early as 40 BC. By the 1800s, the area was growing more than 200 grape varieties. Eventually it became the third largest producer of the Pinot Nero grape, just behind France’s Burgundy and Champagne.
Oltrepo Pavese Grapes
There are four main grape varieties in Oltrepo Pavese and they are: Pinot Noir, Croatina, Barbera, Riesling. In addition, other popular options are: Pinot Grigio and Moscato.
Sparkling Wine in Oltrepo Pavese
Do they do sparkling? They do.
Their Pinot Noir vine clones started getting used in the 1800s and by the 1900s sparkling wine production took off.
Sparkling wine made in the south of Lombardy’s Pavia province Pinot Nero (Noir) is dominant in all wines made under this title, including either white or rosé.
The metodo classico is Italy’s version of the methode traditionelle, proudly used (and protected) by the winemakers of France’s Champagne.

In the glass, a brilliant straw yellow. White and creamy mousse, with continuous perlage. The nose has crusty bread with a citrus finish. The mouth has a soft feel, fresh and lively, with a lingering red fruit aftertaste. Would pair well with white fish, salmon, mussels.
Oltrepo Pavese Pinot Grigio DOC 2021 – Vanzini
In the glass, copper tones. On the nose, floral notes of apple, pear. Soft, elegant mouthfeel, with hints of toast and cream. Would pair well with fish and creamy cheeses.
Sommossa Bonarda dell ‘ Oltrepo Pavese DOC 2021 – Castello De Luzzano
In the glass, Ruby red with purple tinges. On the nose, notes of blackberry and black currant. The mouth is dry and tannic with persistent black currant.
Tiamat, Pino Nero dell’Oltrepo Pavese DOC 2020 – Cordero San Giorgio
In the glass, luminous ruby red color. Red fruit aromas on the nose. Red fruit with a hint of spice on the mouth, soft mouthfeel. Would pair well with chicken and turkey.
Pernice Pinot Nero dell’Oltrepo Pavese DCO 2018 – Conte Vistarino
In the glass, ruby red with garnet specks. The nose has complex violet notes with roasted coffee and cocoa. The mouth is big and elegant. A full body of red fruit with a spicy finish. Could be deliciously paired with gamey and roasted meats, rabbit, mushrooms .
Noir, Pinot Nero, dell’Oltrepo Pavese DOC 2018 – Mazzolino
In the glass, deep bright ruby red with a garnet edge. On the nose, raspberry, and a subtle blend of earth and white pepper. The mouth gets roasted red berries and earthy accents. But the wine keeps opening up! Sweeter red cherry and silky richness that lingers. Could pair well with grilled salmon in a wine sauce

Evolution of bees: Their role in making Plant-based Honey
Traditionally bees have a massive role in producing honey. So, removing their support seems unrealistic, or does it? And sure, scientists can try to explain it. But can someone explain it in simple terms, in a way that a curious foodie could understand it?
Let’s find out in an exclusive interview with Mellody Food’s Darko Mandich.
Darko Mandich is a food entrepreneur in San Francisco. After spending almost a decade in the European honey industry as a business executive, Darko committed to reimagining the honey industry to become sustainable. Darko immigrated from Europe to California to launch Mellody, the world’s first plant-based honey brand. Darko is an advocate of saving the bees and wild pollinators.
Recently, I had a chance to talk with Darko.
From a science point of view, how are you creating plant-based honey products?
The process has to start with philosophy. When people think about science, engineering and process, what comes to their mind is what’s the science? What’s the engineering behind that? What’s the process of making something?
But I would argue that every process, every science starts with a philosophy in the first place. So for us, our philosophy was there’s honey made by the bees in the market, the real ones, that product quality-wise is amazing, but has negative baggage in terms of how it’s made. Next to that, there’s fake honey. There’s basically adulterated honey that’s made by people taking fraudulent activities and blending a little bit of real honey and a lot of rice syrup.
That’s done outside of the US by people trying not to get caught. The third group are vegan honey alternatives, made out of tapioca, dates, maple, pure sugar. These products are just not honey. Trying to impersonate honey, but it’s not honey. It’s a legit product. It’s in the market. People can buy it.
What was missing is the fourth group, which is the category that we pioneered.
Honey, the product that has the composition of real honey but that doesn’t have any rice syrups, nothing that doesn’t belong to honey. But, it’s not made by the bees and therefore by default is vegan and plant-based. So that was the category that we started, and we didn’t start it only for vegans. Obviously vegans are our early adopters. They love what we’re doing. I’m vegan myself. But I want this to be an inclusive company and brand, and therefore we launched this for everybody. For everybody who likes delicious and nutritious foods. By choosing this you’re basically voting for those little creatures to survive on this planet.
You asked me about the process.
You wanna make honey only from something that in nature that touches bees and honey, it’s very strict. Our team studied a lot of different honeys, the different anatomy of the bees, the science behind honey production. Bees land on a flower, they suck up nectar. And there’s a couple of things in a bee’s anatomy. We came up with this proprietary process where we interact with the plants, we take different parts of the plants.
What’s really exciting and cool is we can take the whole plant, break it into different ingredients, and take parts of the plant that maybe bees don’t have access to, like its roots. So we take different ingredients from different plants. We have more than 30 different plants in our product that we launched and we created this process that is basically mixing all those ingredients in a food facility in a regular culinary approach, and basically create a product that looks, tastes, and behaves like honey.
Is your honey currently available at Eleven Madison Home?
This is the product from a direct to consumer collaboration. We just launched with three Michelin star, Eleven Madison Park in New York City.
Yeah, the honey is currently available. The Specialty Tea and Honey Box launched for the Mother’s Day collection and Earth Month.
It’s a specially curated box of artisanal teas coming from different parts of the world with honey and also amazing, shortbread cookies. All plant-based, also made with our honey. That’s available right now
Sometime very soon a standalone jar [of honey] will also be available to Eleven Madison Home.
